The Bulgarian Food Safety Agency and representatives of bread makers in Bulgaria are signing Tuesday the Bulgarian State Bread Standard.
The standard, named "Bulgaria," will be presented by Agriculture Minister, Miroslav Naydenov, and will involve all three main types of bread sold in the country, made from three types of flour – white bread, the bread called Dobrudzha, the bread called Tipov. The bread with "Bulgaria" standard will have a special logo on the packaging.
In addition to high-quality flour, water, salt and yeast, when the crop is not good and there is a need, other substances to improve the bread can be added, the Federation of Bread and Pastry Makers informs, saying the exact substances would be revealed during the official presentation.
Bread with "Bulgaria" standard will be made only from flour from first and second group and second group B wheat. The salt amount will be significantly lower than the average currently used in the Bulgarian bread market.
