Baked Potatoes in Foil

* 1 large baking potato
* cooking oil
* salt and butter or sour cream (optional)
* other possible toppings: spicy beans, avacado, salsa, mushrooms, grated cheese...whatever's left in the fridge!


1. Scrub potato and pierce the skin all over with a fork.
2. Wrap in lightly oiled heavy-duty foil and seal.
3. Cook over medium-hot coals for 45 minutes or until soft.
4. Serve with salt and butter or sour cream
