Forks & Corks: Bulgarian Chicken

Ingredients: 1 cup plain yoghurt, 1 teaspoon salt, 1 clove garlic, minced, 1/2 teaspoon ground cardamom (preferably fresh-ground), 1 teaspoon chili powder, 1/4 teaspoon cinnamon, 3 pounds chicken parts, 2 tablespoons flour

Preparation: Combine the yoghurt and the seasonings. Marinate chicken in yoghurt mixture for at least 4 hours (overnight is best). Remove chicken from marinade and place in a baking pan, skin-side up. Stir flour into marinade and spoon over chicken. Bake at 350 degrees, basting occasionally with marinade, for about 1-1/2 hours or until tender. Use grinded cardamom.
