Forks&Corks: Carrot Jam

Ingredients: 1 kilogram of big and well washed carrots, 1 kg of sugar, 1 glass of water, 1 teaspoonful of salt of lemon, 4-5 leaves of pelargonium or orange flavour

How to cook: Peel the carrots and cut them into small pieces, or grate them. Then wash them again in cold water and boil for 5-6 minutes. Then put the carrots into the boiling syrup (1 kg of sugar and a glass of water for 1 kg of carrots). Boil until the jam is ready and thick enough. Finally add the salt of lemon and the pelargonium or the orange flavor.
