Forks & Corks: Marrow Vegetable Cakes

Ingredients: 1 kg marrow / courgettes, 4 eggs, 300 g sheep cheese, 100 g flour, 1 bunch of dill, 1 teaspoon of red pepper, oil for frying, salt

Preparation: Wash the courgettes and grate them. Leave to drain for at least one hour. There should be no juice left inside them. Then add the mashed cheese, eggs and remaining ingredients. Mix well. Scoop with a spoon and place in the hot oil to fry. Fry until golden brown. Easy, convenient, delicious.
